Ingredients
  

Whipped Feta Base
  • 8 oz feta cheese crumbled
  • 4 oz cream cheese softened
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice fresh
  • 1 clove garlic minced
Bruschetta Topping
  • 1 cup cherry tomatoes finely diced
  • 2 tbsp fresh basil thinly sliced
  • 1 tbsp balsamic glaze
  • salt to taste
  • black pepper to taste

Method
 

  1. Add feta, cream cheese, olive oil, lemon juice, and garlic to a food processor.
  2. Blend until smooth, light, and fluffy, about 1–2 minutes.
  3. Transfer whipped feta to a serving bowl and spread into a swirl.
  4. In a small bowl, combine diced tomatoes, basil, salt, and pepper.
  5. Spoon tomato mixture over whipped feta.
  6. Drizzle with balsamic glaze and extra olive oil.
  7. Serve with crostini, crackers, or warm bread.

Notes

Make the whipped feta base up to 2 days ahead and store refrigerated. Add topping just before serving.
