Ingredients
  

Lemon Loaf Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 2 tbsp lemon zest fresh
  • 0.25 cup lemon juice fresh
  • 0.5 cup milk or yogurt
  • 1 tsp vanilla extract
Honey Butter Glaze
  • 0.25 cup unsalted butter
  • 0.25 cup honey
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Method
 

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time.
  4. Mix in lemon zest, lemon juice, milk, and vanilla extract.
  5. Fold in dry ingredients until just combined.
  6. Pour batter into pan and bake 45–50 minutes until set.
  7. Prepare glaze by melting butter with honey and lemon juice, then whisk in powdered sugar.
  8. Pour warm glaze over loaf and cool before slicing.

Notes

Use fresh lemons for best flavor.
