Ingredients
  

Turkey Meatballs
  • 1 lb ground turkey lean
  • 2 cloves garlic minced
  • 0.25 cup red onion finely chopped
  • 1 egg
  • 0.5 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp cumin
Tzatziki Sauce
  • 1 cup Greek yogurt plain
  • 0.5 cup cucumber grated
  • 1 tbsp lemon juice

Equipment

  • Large skillet

Method
 

  1. Combine all meatball ingredients in a bowl and mix gently.
  2. Form mixture into evenly sized meatballs.
  3. Cook meatballs in a skillet until golden and cooked through.
  4. Mix all tzatziki ingredients in a bowl and chill.
  5. Assemble bowls with grains, meatballs, vegetables, and tzatziki.
