Method
- Preheat oven to 400°F (200°C).
- Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast 35–40 minutes.
- Sauté diced onion in olive oil until translucent.
- Add spices and cook briefly to bloom flavors.
- Squeeze roasted garlic into pot and stir.
- Add broth and simmer 10 minutes.
- Blend until smooth.
- Stir in lemon zest, juice, and optional coconut milk. Serve warm.
