Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 1 tsp turmeric
  • 0.5 tsp smoked paprika
  • 0.25 tsp cumin
  • 6 cups vegetable broth
  • 2 cans white beans drained and rinsed
  • 4 cups kale chopped
  • 1 tbsp lemon juice

Equipment

  • Cutting board

  • Immersion blender

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened.
  2. Add garlic, turmeric, paprika, and cumin. Stir for 1 minute until fragrant.
  3. Pour in vegetable broth and bring to a gentle boil.
  4. Add white beans and simmer for 10 minutes.
  5. Blend about one-third of the soup using an immersion blender for a creamy texture.
  6. Stir in kale and simmer 5 minutes until tender.
  7. Add lemon juice, salt, and pepper to taste. Serve warm.

Notes

Great for meal prep. Add grains or coconut milk for variation.
