Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry slightly and place on prepared sheet. Score a 1-inch border.
- Prick the center with a fork to prevent puffing.
- Arrange brie slices inside the border.
- Layer pears and cranberries over the brie.
- Drizzle with honey and sprinkle with herbs if using.
- Brush border with egg wash.
- Bake for 20–25 minutes until golden and puffed.
Notes
Serve warm for best texture and flavor. Can be made ahead and reheated.
