- Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
- Cut cabbage into wedges, keeping core intact.
- Mix oil and spices, brush onto wedges.
- Roast 20–25 minutes, flipping halfway.
- Mix dip ingredients in a bowl.
- Serve wedges hot with spicy dip.
Notes
For extra crispiness, roast on a wire rack over the baking sheet.
