Ingredients
  

Chia Pudding
  • 1 cup coconut milk
  • 0.25 cup chia seeds
  • 2 tbsp maple syrup to taste
  • 1 tsp vanilla extract
  • 1 pinch salt
Mango Layer
  • 1.5 cups ripe mango diced
  • 1 tbsp lime juice optional
Extras
  • 0.5 cup coconut yogurt

Equipment

Method
 

  1. Blend mango and lime juice until smooth. Set aside.
  2. Whisk coconut milk, chia seeds, maple syrup, vanilla, and salt.
  3. Cover and refrigerate 3 hours or overnight.
  4. Stir pudding until smooth and thick.
  5. Layer chia pudding, mango puree, and yogurt in jars.
  6. Top with fruit and coconut flakes before serving.

Notes

For best texture, chill overnight. Stir once after 30 minutes to prevent clumps.
