Ingredients
  

  • 1.5 lb chicken thighs boneless, skinless
  • 1 cup fresh cranberries
  • 0.75 cup orange juice fresh
  • 1 tbsp orange zest
  • 0.25 cup honey
  • 0.25 cup soy sauce low sodium
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp cornstarch

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil until golden. Remove and set aside.
  3. Sauté garlic and ginger until fragrant.
  4. Add cranberries, orange juice, zest, soy sauce, and honey.
  5. Simmer until cranberries soften.
  6. Return chicken to skillet.
  7. Stir in cornstarch slurry and simmer until thick.
