Method
- Boil pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
- Heat olive oil in skillet. Cook onion until soft.
- Add garlic and chili flakes. Sauté briefly.
- Stir in tomato paste and cook 2–3 minutes.
- Add vodka and simmer 2 minutes.
- Stir in cream and pasta water. Simmer gently.
- Add pasta and toss to coat.
- Remove from heat and fold in burrata.
Notes
Adjust spice level to taste. Add protein if desired.
