Spicy Vodka Pasta with Creamy Burrata

Ingredients
  

Pasta & Sauce
  • 12 oz pasta rigatoni or penne
  • 2 tbsp olive oil
  • 1 onion small, diced
  • 4 cloves garlic minced
  • 1.5 tsp red pepper flakes
  • 3 tbsp tomato paste
  • 0.5 cup vodka
  • 1 cup heavy cream
  • 0.5 cup pasta water reserved
  • 1 ball burrata torn

Equipment

  • Large pot
  • Skillet
  • Wooden spoon

Method
 

  1. Boil pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
  2. Heat olive oil in skillet. Cook onion until soft.
  3. Add garlic and chili flakes. Sauté briefly.
  4. Stir in tomato paste and cook 2–3 minutes.
  5. Add vodka and simmer 2 minutes.
  6. Stir in cream and pasta water. Simmer gently.
  7. Add pasta and toss to coat.
  8. Remove from heat and fold in burrata.

Notes

Adjust spice level to taste. Add protein if desired.
