Ingredients
  

Zoodles & Chicken
  • 2 zucchini spiralized
  • 1 lb chicken breast thin sliced
  • 2 tbsp sesame oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
Sauce
  • 0.25 cup soy sauce low sodium
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp chili garlic sauce
  • 1 tsp cornstarch optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Whisk all sauce ingredients together in a bowl.
  2. Cook chicken in oil until golden and cooked through. Remove and set aside.
  3. Sauté garlic and ginger in the same pan until fragrant.
  4. Add sauce and simmer until thickened.
  5. Return chicken to pan and toss to coat.
  6. Add zucchini noodles and toss gently until just tender.
  7. Garnish with sesame seeds and green onions.

Notes

Do not overcook zoodles or they will become watery.
