Ingredients
  

Meatballs
  • 1 lb ground chicken or beef
  • 0.5 cup panko breadcrumbs
  • 1 egg large
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp soy sauce
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp sesame oil
Firecracker Sauce
  • 0.5 cup sweet chili sauce
  • 0.33 cup brown sugar packed
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha
  • 2 cloves garlic minced
Creamy Drizzle
  • 0.5 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tsp lime juice
  • 1 tsp honey

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix all meatball ingredients until just combined.
  3. Roll mixture into 1½-inch balls and place on the baking sheet.
  4. Bake for 15–18 minutes until cooked through and lightly browned.
  5. Meanwhile, combine all firecracker sauce ingredients in a saucepan.
  6. Simmer over medium heat 5–7 minutes until thick and glossy.
  7. Whisk creamy drizzle ingredients until smooth.
  8. Toss baked meatballs in sauce and drizzle with creamy mixture before serving.

Notes

Adjust sriracha for heat level. These freeze well and reheat beautifully.
