Ingredients
  

Barbacoa Beef
  • 3 lbs beef chuck roast
  • 3 dried guajillo chilies seeded
  • 2 dried ancho chilies seeded
  • 4 cloves garlic
  • 1 onion chopped
  • 3 tbsp apple cider vinegar
  • 2 tbsp lime juice fresh
  • 1 cup beef broth

Method
 

  1. Toast dried chilies briefly in a skillet until fragrant.
  2. Soak chilies in hot water for 15 minutes.
  3. Blend chilies with garlic, onion, spices, vinegar, lime juice, and broth.
  4. Sear beef chuck roast on all sides.
  5. Place beef in slow cooker and pour sauce over.
  6. Cook on LOW for 8–9 hours or HIGH for 4–5 hours.
  7. Shred beef and mix with sauce before serving.

Notes

Serve with warm tortillas, cilantro, onion, and lime.
