Ingredients
  

Custard Base
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 3 egg yolks large
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
Cranberry Layer
  • 1 cup cranberries fresh or frozen
  • 0.25 cup brown sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.125 tsp cloves

Method
 

  1. Simmer cranberries, brown sugar, and spices until thickened.
  2. Whisk yolks, cornstarch, and sugar in bowl.
  3. Heat milk and cream until steaming.
  4. Temper eggs with hot milk.
  5. Cook custard until thick and silky.
  6. Stir in vanilla and salt.
  7. Layer cranberry and custard in cups.
  8. Chill 2 hours before serving.

Notes

Do not boil custard or it may curdle.
