Method
- Heat a large skillet over medium heat and add olive oil.
- Add sausage and cook, breaking it up, until browned and cooked through.
- Add onion and cook until softened, about 3–4 minutes.
- Stir in garlic and red pepper flakes; cook 30 seconds.
- Add dry pasta and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer 10–12 minutes, stirring occasionally.
- Stir in heavy cream and Parmesan until smooth.
- Add spinach and cook until wilted.
- Season with salt and pepper. Serve hot.
Notes
Use spicy sausage for extra heat or add mushrooms for more texture.
