Ingredients
  

Carrots
  • 1.5 lb carrots peeled and halved
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Whipped Ricotta
  • 1 cup whole milk ricotta
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Equipment

  • Mixing bowls
  • Baking sheet
  • Parchment paper
  • Hand mixer or food processor

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Toss carrots with olive oil, honey, salt, and pepper.
  3. Roast for 25–30 minutes, flipping halfway, until tender and caramelized.
  4. In a bowl, whip ricotta with olive oil, lemon zest, and lemon juice until fluffy.
  5. Spread ricotta on a plate and top with roasted carrots.
  6. Garnish with herbs and serve warm.

Notes

Add nuts or chili flakes for extra texture and heat.
