Ingredients
  

Salad
  • 4 fresh beets medium, scrubbed
  • 2 tbsp olive oil
  • 4 cups arugula
  • 0.5 cup feta cheese crumbled
  • 0.33 cup walnuts toasted
Vinaigrette
  • 3 tbsp olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Roast wrapped beets with olive oil until tender, about 45 minutes.
  3. Cool, peel, and slice the beets.
  4. Whisk vinaigrette ingredients together.
  5. Assemble salad with greens, beets, feta, and walnuts.
  6. Drizzle with vinaigrette and serve.

Notes

Beets can be roasted in advance and stored refrigerated for up to 4 days.
