Method
- Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper.
- Mix graham crumbs, melted butter, honey, and salt. Press into pan and bake 10 minutes.
- Beat cream cheese until smooth. Add honey and mix well.
- Add eggs one at a time, then vanilla and sour cream.
- Pour filling over crust and spread evenly.
- Simmer figs, honey, and lemon juice until thick. Spoon over cheesecake.
- Bake 30–35 minutes until center is set. Cool completely.
- Chill at least 3 hours before slicing into bars.
Notes
Use fresh figs for best flavor. Bars taste even better the next day after chilling overnight.
