Ingredients
  

Salad Base
  • 2 ripe mangoes peeled and diced
  • 2 English cucumbers thinly sliced
  • 1 small red onion thinly sliced
Dressing
  • 2 tbsp lime juice fresh
  • 1 tsp lime zest
  • 1 tbsp fresh ginger grated
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 0.25 tsp sea salt
  • 0.25 tsp crushed red pepper flakes optional
  • 2 tbsp fresh mint chopped
  • 1 tbsp fresh cilantro chopped

Equipment

  • Mixing bowls

Method
 

  1. Peel and dice mangoes and place in a large bowl.
  2. Slice cucumbers thinly and add to the bowl with onion.
  3. Whisk lime juice, zest, ginger, olive oil, honey, salt, and chili flakes.
  4. Pour dressing over salad and toss gently.
  5. Fold in mint and cilantro.
  6. Let sit 5 minutes before serving.

Notes

Best served fresh. Chill before serving for extra refreshment.
