- Preheat oven to 375°F (190°C). Brush tortillas with butter and sprinkle with cinnamon sugar.
- Drape tortillas over oven rack to form taco shapes and bake until golden and crisp. Cool completely.
- Cook strawberries, sugar, and lemon juice in a saucepan until syrupy. Cool.
- Beat cream cheese until smooth. Add powdered sugar and vanilla.
- Whip in heavy cream until light and fluffy.
- Fill taco shells with cheesecake filling and top with strawberry sauce.
