Ingredients
  

Salad Base
  • 1 lb ground beef or turkey
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 2 tbsp tomato paste
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cheddar cheese shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn
  • 1 avocado diced
  • 2 cups tortilla chips crushed

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat olive oil in a skillet and sauté onion and garlic until fragrant.
  2. Add ground meat and cook until browned. Drain excess fat.
  3. Stir in taco seasoning and tomato paste with a splash of water. Simmer 5 minutes.
  4. Chop lettuce and prep all vegetables.
  5. Layer lettuce, meat, beans, corn, tomatoes, cheese, and avocado in bowls.
  6. Top with crushed tortilla chips and drizzle with dressing.

Notes

Add chips right before serving for best crunch.
