Ingredients
  

Sandwich
  • 4 slices sandwich bread
  • 2 tbsp unsalted butter softened
  • 1 cup baby spinach chopped
  • 1 tomato sliced
  • 1.5 cups shredded mozzarella or provolone
  • 0.5 cup shredded cheddar

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Butter one side of each bread slice.
  2. Layer cheese, spinach, tomato, seasoning, and more cheese between bread slices.
  3. Cook sandwiches in a skillet over medium-low heat 3–4 minutes per side.
  4. Flip once golden and melted.
  5. Rest 1 minute, slice, and serve warm.

Notes

Pat tomatoes dry for best texture.
