  • 2 lbs Yukon Gold potatoes peeled
  • 3 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • 1 clove garlic minced
  • to taste salt and black pepper
  • 0.25 cup grated Parmesan cheese optional
  • 1 sheet puff pastry optional for base

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Slice potatoes thinly, rinse to remove starch, and pat dry.
  2. Preheat oven to 425°F (220°C) and prepare the baking pan.
  3. Arrange potato slices in a circular overlapping pattern in the pan.
  4. Drizzle butter and olive oil; sprinkle garlic, thyme, salt, pepper, and Parmesan.
  5. Cover loosely with foil and bake 25–30 minutes.
  6. Remove foil and bake another 20–25 minutes until golden and crispy.
  7. Cool 5 minutes, then invert onto a serving plate and serve warm.

Notes

Ensure potato slices are thin and uniform for best results.
