- Heat olive oil in skillet over medium heat. Add onion and garlic and sauté until soft.
- Add spinach and cook until wilted. Remove from heat.
- Mix spinach with feta, mozzarella, and olives.
- Heat tortilla in skillet, add filling to one side, fold, and cook until golden.
- Flip and cook until cheese melts. Repeat and slice to serve.
Notes
Serve with tzatziki or Greek salad for best flavor.
