Method
- Peel, core, and slice pineapple into rings. Pat completely dry with paper towels.
- Prepare three bowls: flour with cinnamon and salt; eggs with vanilla; coconut mixed with panko and sugar.
- Dip each pineapple ring into flour, then egg, then coconut mixture, pressing to coat well.
- Heat oil in a skillet over medium heat or preheat air fryer/oven.
- Fry rings 2–3 minutes per side until golden, or bake at 400°F for 15–18 minutes flipping once.
- Transfer to wire rack to cool slightly and stay crispy.
- Serve warm with honey, yogurt, or chocolate drizzle.
Notes
For best crunch, use fresh pineapple and press coconut firmly onto each ring.
