Ingredients
  

Pineapple Rings
  • 1 fresh pineapple peeled, cored, sliced into rings
  • 0.5 cup all-purpose flour
  • 2 eggs large
  • 1 cup shredded coconut unsweetened
  • 0.5 cup panko breadcrumbs
  • 2 tbsp sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
  • 1 tsp vanilla extract
  • 0.5 cup oil for frying or brushing

Method
 

  1. Peel, core, and slice pineapple into rings. Pat completely dry with paper towels.
  2. Prepare three bowls: flour with cinnamon and salt; eggs with vanilla; coconut mixed with panko and sugar.
  3. Dip each pineapple ring into flour, then egg, then coconut mixture, pressing to coat well.
  4. Heat oil in a skillet over medium heat or preheat air fryer/oven.
  5. Fry rings 2–3 minutes per side until golden, or bake at 400°F for 15–18 minutes flipping once.
  6. Transfer to wire rack to cool slightly and stay crispy.
  7. Serve warm with honey, yogurt, or chocolate drizzle.

Notes

For best crunch, use fresh pineapple and press coconut firmly onto each ring.
