Pineapple Rings
  • 1 fresh pineapple peeled and sliced into rings
  • 1 cup all-purpose flour
  • 2 eggs large
  • 0.25 cup milk or coconut milk
  • 1.5 cups sweetened shredded coconut
  • 0.5 cup panko breadcrumbs
  • 0.25 cup granulated sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp salt

Method
 

  1. Prepare pineapple rings and pat dry.
  2. Set up flour, egg mixture, and coconut coating bowls.
  3. Dip rings in flour, egg, then coconut mixture.
  4. Fry, air fry, or bake until golden and crisp.
  5. Drain on rack and serve warm.
