Ingredients
  

Fritter Mixture
  • 1 lb ground chicken
  • 2 cups zucchini grated and squeezed dry
  • 2 eggs
  • 0.5 cup all-purpose flour
  • 0.5 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp fresh parsley chopped

Method
 

  1. Grate zucchini and squeeze out excess moisture using a towel.
  2. In a large bowl, mix ground chicken, zucchini, eggs, garlic, Parmesan, herbs, and spices.
  3. Add flour and stir until mixture holds together.
  4. Heat oil in a skillet over medium heat.
  5. Form small patties and place into the skillet.
  6. Cook 3–4 minutes per side until golden and cooked through.
  7. Transfer to a wire rack and repeat with remaining mixture.

Notes

Serve with yogurt sauce or your favorite dip.
