Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 2 tbsp orange zest fresh
  • 0.75 cup orange juice fresh
  • 1 tsp vanilla extract
  • 1.5 cups fresh cranberries

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line cake pan.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs, orange zest, orange juice, and vanilla; mix well.
  5. Gradually add dry ingredients until just combined.
  6. Fold in cranberries gently.
  7. Bake 45–55 minutes until a toothpick comes out clean.
  8. Cool completely before serving.

Notes

Delicious with powdered sugar or orange glaze.
