Method
- Season and lightly flour the beef.
- Brown beef in batches in a Dutch oven and set aside.
- Caramelize onions slowly in butter until golden.
- Add garlic, thyme, and bay leaves.
- Deglaze pot with broth, scraping browned bits.
- Return beef and remaining broth, then simmer covered for 90 minutes.
- Top with cheese and broil until melted before serving.

Best served with crusty bread.
