Ingredients
  

Stew Base
  • 2 lbs beef chuck cubed
  • 3 large yellow onions thinly sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 4 cups beef broth
  • 1 tsp thyme
  • 2 bay leaves
  • to taste salt and pepper
  • 1 cup Gruyère cheese grated

Equipment

  • Dutch oven
  • Wooden spoon
  • Chef knife

Method
 

  1. Season and lightly flour the beef.
  2. Brown beef in batches in a Dutch oven and set aside.
  3. Caramelize onions slowly in butter until golden.
  4. Add garlic, thyme, and bay leaves.
  5. Deglaze pot with broth, scraping browned bits.
  6. Return beef and remaining broth, then simmer covered for 90 minutes.
  7. Top with cheese and broil until melted before serving.

Notes

Best served with crusty bread.
