Ingredients
  

Blondie Batter
  • 1.75 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 1 egg large
  • 1 egg yolk
  • 1 tbsp vanilla extract
S'mores Filling
  • 1.5 cups graham cracker pieces
  • 1.5 cups chocolate chunks
  • 1.5 cups mini marshmallows

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13 pan with parchment.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Mix melted butter and brown sugar until smooth.
  4. Whisk in egg, yolk, and vanilla.
  5. Fold in dry ingredients until just combined.
  6. Stir in graham crackers and chocolate.
  7. Spread into pan and top with marshmallows.
  8. Bake 25–30 minutes until edges are golden.

Notes

Do not overbake for the best chewy texture.
