  • 2 cups sweet potatoes thinly sliced
  • 6 eggs large
  • 1 cup milk
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup onion diced
  • 2 cloves garlic minced
Sauce
  • 2 tbsp butter
  • 0.5 cup cream
  • 0.5 cup cheese shredded

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Roast sweet potato slices until just tender.
  3. Whisk eggs, milk, salt, and pepper in a bowl.
  4. Layer sweet potatoes, onions, garlic, and cheese in the dish.
  5. Pour egg mixture over layers and bake until set.
  6. Prepare sauce by melting butter and stirring in cream and cheese.
  7. Serve strata warm with sauce drizzled on top.
