Ingredients
  

Vegetables
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup zucchini sliced
  • 1 red bell pepper chopped
  • 1 red onion sliced
  • 1 cup cherry tomatoes
Cheese & Seasoning
  • 1 cup mozzarella cheese shredded
  • 1 cup cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp olive oil
  • 2 cloves garlic minced

Method
 

  1. Preheat oven to 425°F (220°C) and grease a baking dish.
  2. Toss vegetables with olive oil, garlic, salt, and spices.
  3. Roast vegetables on a baking sheet for 20–25 minutes.
  4. Transfer roasted vegetables to a casserole dish.
  5. Top with mozzarella, cheddar, and Parmesan cheese.
  6. Bake for 10–15 minutes until cheese is melted and bubbly.

Notes

Use any combination of vegetables you like. Broil briefly for a crisp cheese topping.
