Ingredients
  

Beef Fried Rice
  • 3 cups cooked jasmine rice day-old and cold
  • 10 oz flank steak or sirloin thinly sliced
  • 2 tbsp soy sauce divided
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp vegetable oil divided
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • 2 eggs beaten
  • 1 cup frozen peas and carrots
  • 3 scallions sliced
  • 0.5 tsp white pepper or black pepper

Equipment

  • Large skillet or wok
  • Mixing bowls
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. In a bowl, mix beef with soy sauce, oyster sauce, sesame oil, and cornstarch. Let marinate 10 minutes.
  2. Heat 1 tablespoon oil in a skillet or wok. Scramble eggs until just set. Remove and set aside.
  3. Add remaining oil and cook beef until browned. Remove and set aside.
  4. Add garlic and ginger to the pan. Stir until fragrant.
  5. Add peas and carrots. Cook 2 minutes.
  6. Add rice and stir-fry 3–4 minutes.
  7. Return beef and eggs to the pan. Add remaining soy sauce and pepper. Toss well.
  8. Stir in scallions and serve hot.

Notes

Use cold, day-old rice for best texture. Slice beef thinly against the grain for tenderness.
