Ingredients
  

Soup Base
  • 4 cups russet potatoes peeled and diced
  • 4 tbsp unsalted butter
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup whole milk
  • 0.5 cup heavy cream

  • Immersion blender

Method
 

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic and cook 30 seconds.
  4. Sprinkle flour over mixture and cook 1 minute.
  5. Slowly add broth, stirring constantly.
  6. Add potatoes and simmer until tender, about 20 minutes.
  7. Blend partially using an immersion blender.
  8. Stir in milk and cream, season, and simmer 5 minutes.

Notes

Adjust thickness with extra broth or milk as needed.
