Here we are just in time for the holidays with another review and of course a giveaway! It’s not holiday time in my house without baking. I am participating in the Food Blogger Cookie Swap, I am hosting my own cookie swap, and of course I bake for my family, friends and neighbors. This means I need A LOT of flour. I am very loyal to two brands, one is King Arthur and the other is Bob’s Red Mill. I love that Swanson carries a variety of Bob’s Red Mill products, including some gluten-free items!

I got hooked on this stuff when I received it in a Foodie Pen Pals box last year. I drizzle my veggies with olive oil and sprinkle this on top, it is so delicious, and I cannot find it anywhere else!

The first time I tried Coconut Oil was the first time I ordered from Swanson, and I haven’t used any other brand since. Nick loves to use this when we make popcorn on the stove top!

A fun treat for the B man and also my sister, ha. I love that Annie’s Organics are available online at Swanson.

Elf4Health and Other Fun Stuff!

My blogging is never 100% on point around the holidays, frankly it is the easiest thing for me to step back from and just take a break from in order to not feel (super) overwhelmed and stressed.

Just to give you an update on what’s going on/what’s coming up, I thought I would throw together a fun picture post!

I am participating in the Elf4Health again this year!

Here are the list of everyday “activities”. Yesterday was meatless monday. Usually this isn’t a big deal, I had my usual oats and peanut butter for breakfast and eggs with avocado and tomato for lunch, but because of the holiday Nick and I are in the mode of “use everything in the fridge” so I made a steak & cheese sub with peppers and onions for Nick and was planning on making a veggie sub for myself but there was too much steak, and I didn’t want to throw it out. It’s the thought that counts right?

Today, I unsubscribed from a lot of emails, I get a lot of duplicates between my blog email and my personal email. Tomorrow is a new workout, I think I will try a Pinterest one, Thanksgiving is to make a phone call and Friday is to track water intake, both are things I like to do and will hopefully be easy! Saturday is Treat YO SELF, Nick and I are going to a dinner dance at church, so definitely treats ;) and Sunday is 100 burpees…that last one looks fun ha!

Speaking of holiday baking…I finally put my cookies in the mail (yesterday) for The Great Food Blogger Cookie Swap. I am so excited to be able to participate this year!

Come back on December 11 and I will share with you the family recipe Nick’s mom passed down to me that I made and sent to my recipients!

Now with all this baking, I am glad that Achieve is holding a competition to get our butts in the gym. Basically we get points for every class, vacation workout, check-in, smoothie, etc… A lot of these things are ones I already do but this is a great way to stay on top of things during the holiday season!

I am going to take a break until after the holiday, but tell me what exciting things do you have going on?

Thursday Things: What you do matters

1. ONE TREE HILL

I am not ashamed to say that I am sad that One Tree Hill is over, for good. It has been the only show I have really stuck with over a long period of time. It holds great memories for me. The end of the show is almost like the end of an era. I guess it’s time for me to grow up.

I started watching in college, with a group of my sorority sisters. Before DVRs, we used to all block out this one hour of time to take over the house tv, and watch together. It is one of my favorite memories in college, and I miss spending that time with those girls.

I think part of it too was that when you are young and vulnerable and watching a show where those people are sort of in the same situations that it resonates with you. The quotes, the music, the characters. The show always made me feel like no matter what you what it is theta you are doing, WHAT YOU DO MATTERS. I will miss it all. I don’t really care if that makes me a baby. I will always miss it.

I will just leave you with one of my favorite quotes and then I will go on acting like a normal 27 year old.

2. NEW FOOD

In this post I talked about trying new products. Swanson Health Products also sent me chia seeds and a multi-vitamin.

I have obviously seen the craze about chia seeds and have wanted to try it but didn’t want to buy a whole container just to hate it.

I tried it on my oatmeal and I didn’t like it. I couldn’t get past the texture. Have you tried chia seeds? In what foods? If you want to try them let me know, I have a whole container just sitting here.

I also am really bad at taking my vitamins, I hate pills, I can take them but for some reason they make my stomach hurt. When I was pregnant I went through every single vitamin brand and every single one made me sick, until I found the gummy ones. They were the only ones I could take that didn’t immediately make me run to the bathroom. So I though a gummy multi-vitamin would be great.

They are the same as the pre-natal vitamins in terms of how easy on my stomach they are, but the flavor of the pre-natal vitamins are MUCH better. Seriously like candy.

3. BABY FOOD

I have had a how to make your own baby food post in the making for awhile. It’s great timing because now B seems to not want to east the pureed food that I make him. He has learned how to blow raspberries and he loves to do it with food in his mouth.

He thinks it is so funny. So now we are moving to primarily table food since he actually eats that. I will be posting my baby food tutorial soon, and adding a post about table foods!

WIAW: Weekend Snacks & a cookie recipe

This weekend was full of new recipes and treats. I made the traditional corned beef and cabbage. I also tried my hand at Guinness cupcakes with a baileys cream cheese frosting. I made almond flour cookies and we tried a new at home popcorn recipe.

I was contacted by Swanson Health Products to try some of their products.

The first product was California Almond Flour. I have wanted to try almond flour for a very long time. The first thing I made was a coconut chocolate chip almond flour cookie.

First you need almond flour, obviously.

Mix:

1 1/2 cups of almond flour

1/2 cup unsweetned coconut

1/2 tsp of baking soda

1/4 tsp of salt

In a separate bowl mix:

1/4 cup melted unsalted butter

1/4 cup brown sugar

1 egg

1 tsp of vanilla

Combine the wet and dry ingredients, then add 3/4 cup of chocolate chips.

I used a meatball baller to make the cookies, and placed them on an ungreased cookie sheet. I put them in the oven at 350F for approximately 10 minutes.

The cookies essentially kept their shape and tasted like toasted macaroons, I honestly wouldn’t know that they were made with almond flour instead of regular flour. I won’t lie, every single cookie is gone. In the future I can only make these when we have guests or else I will eat every single one.

In good news they are only 89 calories per cookie.

The other product I tried was coconut oil. Nick has been after me for almost a year to get some. The only place I can find it around here is Whole Foods, and it is so expensive there. So, I jumped at the chance to get it from Swanson.

The reason Nick wanted it was for popcorn. We have a whirly-pop

So we always make our own popcorn, Nick however is the type of guy who researches everything, including popcorn. He read that it was best to use coconut oil instead of regular olive oil. Seriously this is the best popcorn I have ever had. I don’t think I will ever be able to eat movie theater popcorn again. I don’t think it needs any extra butter or salt.

I can’t wait to make other delicious items with the coconut oil.

Lastly, I made a Guinness cupcake with bailey’s cream cheese frosting.
