HLS12: Day 2 Recap

Check out my recap of Friday if you missed it!

After I found out the wonderful news!

It was time for a WOD (workout of the day) with Crossfit One, from Reebok’s headquarters in Canton. It was a quick workout, 5 minute AMRAP (as many reps as possible): 7 squats & 15 jumps, repeat as many times as possible in 5 minutes. I have been a bit hesitant about Crossfit, but I really loved it, now if only a Crossfit membership wasn’t so darn expensive.

After the workout, I visited some of the sponsor booths including Wild Harvest, Happy Family, Cheribundi, Energybits, Driscoll’s and of course Reebok!

After I visited the booths it was time for the sessions to start. It was really hard for me to decide which 4 of the 8 to attend.

I ended up attending
Blog Photog Basics with Gretchen

I really learned a lot of valuable information from Gretchen. I have a DSLR but I am super guilty of using the auto setting and flash a lot. This session gave a lot of tips on how to get quality photos without either of those things.

Blogging with Brands: A panel hosted by Lauren

Lauren led the panel, composed of bloggers: Anne, Ashley, Theodora and brands: Kelly, Valerie and Laura. She asked them questions about bloggers working with brands and how brands view working with bloggers. I have to say this session was extremely helpful and I took literally 5 pages of notes. A few gems that I want to share with you. If you wouldn’t work with a company for free you probably shouldn’t work with them for money. Always stay true to your brand and believe you are worth something.

In between the morning and afternoon sessions we had an amazing lunch, I wish I took photos, and a keynote from some wonderful ladies at Wild Harvest, Genie Nicholas & Kim Kirchher. After the keynote we moved into the second round of sessions!

I am the blogger in your neighborhood: Hosted by Holly, Meghann and Claire

Another extremely informative session. A big takeaway was to start with local companies to build your presence and brand, you don’t have to go after the national companies from the get go, sometimes you get the same if not more from the local smaller company.

Social Media: Keeping Up with Online Trends hosted by Heather

Most of this session geared around Facebook and Twitter and how to use them more efficiently. I can’t wait to start using buffer, which Heather introduced me to!

After the sessions and the closing remarks from Meghann, Heather and Julie, I headed home to spend some quality time with my little one and my husband. As much as I would have loved hanging out with the other bloggers it was really important for me to be home with B, and to give my husband a break from the disaster that is a child’s first tooth.

After my first HLS and my first blogging conference, I know without a doubt I would do it again. It has been one of the best experience I have had, and I am so glad I got over my nerves and put myself out there, it has been extremely rewarding.

HLS12 Day 1

Friday morning started with a workout with a few other bloggers and was led by Kristen!

After running home and cleaning up, I headed back to HLS for a Whole Foods meet up at the River Street location (my favorite) and then a few of us also hit up Flour in Cambridge. I was still pretty full from lunch so I got an iced coffee and an oreo.

Then it was time for early check-in, where I picked up my name tag and swag bag.

We listened to Derek from Greatist talk for awhile and I met Erin and Allie. After a little chatting Alex and I went back to the hotel room and had a little down time and chatted until we needed to get ready for the cocktail party.

The cocktail party was pretty laid back, but after some chatting with some wonderful bloggers & a glass of champagne, I was exhausted so I headed to bed

I slept okay but was woken up by a phone call around 4:30, Nick called saying B was sick and he needed the car seat, so I headed back to the house and dropped off the car seat. Slept for about an hour then headed back to the conference.

Next up: The sessions!

HLS12: Wild Harvest Breakfast Showdown

Hello, new and old friends. Welcome to my little corner of the blog world!

In case you’re new to the blog, my name is Kelly and I’ve been writing at Cupcake Kelly’s since August 2010. I write about my family, food and fitness.

If you’re old to the blog, welcome back! This past weekend at Healthy Living Summit was definitely an intense couple of days full of meeting new people, learning new things, and having fun.

Make sure you check out my Day 1 recap of HLS!

Saturday morning started with a breakfast hosted by Wild Harvest!

I entered the contest back in July, you can find my recipe here.

I found out at the end of July that I was selected as one of the top 5 finalists, and we would all find out the winner at the Healthy Living Summit.

Saturday morning proves to be very interesting. I stayed with Caitlin, Alex, Heather and Katelyn so that I could have whole HLS experience, and so that I could get some decent sleep. My son ended up being sick that night so I ended up going home at 5 am and getting back to the hotel for the Summit a little after 8 am on Saturday. (The sickness was teething and a cold, but glad to see my boy for a few moments)

I walked into breakfast and saw this!

ummmm what!? I am still in shock I think…

I just want to say congratulations to all the other top 5 contenders, I am sure your dishes were amazing, I wish we could have tried them all.

They even included recipe cards so everyone could re-create the dish at home.

They even made an announcement at the breakfast and I was given one of those giant gift cards!

It was crazy to think that I developed this recipe and not only was it tested at the Wild Harvest Kitchens, but it was made for everyone at the hotel for HLS.

I am so honored to have been picked by Wild Harvest as the winner of the Healthy Living Summit Breakfast Showdown. I also want to say thank you to all of you who came up to me at HLS or tweeted me congratulations, I am so thankful to be part of such a wonderful and supportive community.

I can’t wait to share with you the rest of my experiences at HLS!

Healthy Living Summit 2012: What I am looking forward too!

Healthy Living Summit starts in less than 72 hours! Oh my goodness it seems like it was a few days ago when I bought my ticket!

Since this is my first conference I thought I would share with you all the top five things I am looking forward too. I have to say there are more then five things that I am looking forward too, but I don’t think you want to read a 4 page post!

In no particular order here are the TOP FIVE:

1. Wild Harvest Breakfast Showdown

To say that I was shocked that I made the Top 5 for the breakfast showdown would be an understatement. Regardless of the outcome I am very happy of my success thus far and I want to say good luck to Kristin, Alicia, Heather and Amy. I am very proud of my recipe, and I know whatever they choose, the breakfast spread at HLS will be AMAZING.

2. Meeting other bloggers

While this is probably the scariest thing for me, I am very shy around new people, this is also very exciting. Very few of my real life friends are as into blogging as I am and have made it a part of their life. I am very excited to meet such like minded people. If you see me being quiet, I am just shy not rude

In August I am attending my first blogging conference, I mean it is practically in my backyard, so I have to go right?

I am attending the Healthy Living Summit in Cambridge, MA. When I registered for the conference I had the option to participate in the breakfast showdown. A cooking competition and a conference? Win, win. Last week a box of WILD HARVEST® goodies appeared on my door stop and I couldn’t wait to see what was inside.

The idea is to use three or more of the WILD HARVEST® items and to make a healthy breakfast!

I decided to use:
WILD HARVEST® Mango Peach Salsa
WILD HARVEST® Organic Black Beans
WILD HARVEST® Cage Free Brown Eggs
WILD HARVEST® Cayenne Pepper

IMG 2113

So what did I make? A delicious Greek inspired egg scramble!

I always like to prepare all my ingredients before I even start cooking.

• Chop a medium yellow onion and 6 cloves of garlic

• 1/2 cup of non-fat milk

•1 cup of frozen spinach thawed & drained

•1/2 cup of feta

To start I drizzled some olive oil, straight from Greece, in a pan and sautéed the garlic and onion.

IMG 2117

WHile the onion and garlic was cooking I combined 7 of the WILD HARVEST® eggs and the milk in a bowl.

Once that was mixed I added the feta, spinach, 1/2 tsp of salt, 1/4 tsp of pepper and WILD HARVEST® black beans

At the last minute I decided to add 1/4 tsp of the WILD HARVEST® Cayenne Pepper.

IMG 2116

I poured the egg mixture into the skillet, set the temperature to medium and covered the dish. I let the scramble cook for 6 minutes.

I cut the scramble into 4 portions

IMG 2121

Then I covered each portion with the WILD HARVEST® Mango Peach Salsa.

I wasn’t sure what to expect from the dish but it was filling, spicy and delicious. This is a great breakfast because it can fill you up without feeling heavy.

The top 5 finalists will be announced on or before August 18 and the winner will be announced at the Summit, the winner receives a $500 gift card redeemable at SUPERVALU stores! Good luck to all the other competitors!
