Fitness Friday: In a rut

I will be the first to admit when something with my lifestyle needs a change.

I am doing awesome with keeping up with my half-marathon training and my calorie counting, but I am getting sick of some of my go-to foods.

I have a pretty standard breakfast and Nick and I rotated through a dozen or so healthy dinners, and I am satisfied with that. Where I am in a rut is my lunches and snacks. I have been eating salads for lunch and my snacks are your average apples & carrots.

I need new ideas, but I have been reading a lot of healthy living blogs and recipes and they are all complicated. The easiest part of the salad, is that I can prepare a huge one on Sunday and eat it all week. I need items that are either easy to make in large batches and will last or quick! What are your favorites?

I find myself craving my bad “comfort” foods or dreading lunch because I am so bored. Give me your favorite recipes and hopefully you will see them here soon.

How do you get out of a food rut?

  1. I tend to get into ruts too! Sometimes I roast a ton of veggies on Sunday and then make wraps with them with some hummus and spinach. I usually put in zuchini, summer squash, an onion, peppers, and mushrooms (you can really put in whatever). Then I toss them in balsamic vinegar and a little olive oil and hot pepper flakes. I roast them for an hour at 400*. It's so yummy and the best part is that it is done for the week. You can toss it with some chicken too.

  2. when im in a food rut i always look on you lovely ladies blogs to get some inspirations! thats what helps me out! i know what you mean about complicated recipes though! some of my simple snack staples are cereals, granolas, yogurts, low fat cheeses, hummus, bars, nut butters, pita chips or rice cakes with some pb… etc. hopefully that can be of some help!! SPAlove!

  3. My favorite go-to easy lunch is this:

    1 cup plain greek yogurt
    2 tbsp sugar-free preserves
    1/4 cup granola
    1/2 packet truvia

    Mix together and enjoy! Super filling with 27g of protein (yet light enough that I don't feel weighed down) and super yummy!

  4. I totally understand where you're coming from – I always want to have something convenient and easy, but then once it comes time for me to actually eat my lunch, I'm less than excited about it. I've found the easiest thing to do is to bring leftovers which just requires you to make a little more when you're making dinner. I also love veggie sandwiches/wraps (with hummus, avocado, cucumbers, etc.). I've also found a lot of good eats on Pinterest. Hope you get out of your rut soon!
