❊ I threw out B’s extra leftover cake, I’ll thank myself later.

❊ I am looking forward to spending time at home, it feels like it’s been forever since I have spent an entire 7 day week here.

❊ I bought the husband a birthday gift, and then felt guilty about spending the money.

❊ I got over it. It’s an amazing gift.

❊ I put my baby in muscle shirts in the heat, he looks adorable.

B’s Birthday Party

As you all know B turned one last monday, we waited until this past weekend to have his birthday party so that most of our immediate family could attend.

I am going to write real posts about all the aspects that went into this party, but I wanted to share some photos from our weekend!

Playlist Thursday: Covers

I am linking up with Pavement Runner today. I LOVE his music posts, mostly because I am always looking for new running songs to add to my playlist, but because of the format of his posts.

Today’s theme is: Covers. It can be legitimate cover songs, or songs that sample another song. I am also going to incorporate another theme, John Mayer. I know a lot of people hate him, but he is a brilliant musician.

So What! Wednesday

This week I am saying so what if…

❊ I was going to make a lot of cakes for B’s birthday party, but instead I ordered one for the adults and I am making his smash cake.

❊ I am not crafty enough to make crazy party decorations, and bought most of my stuff.

❊ There might be more desserts then lunch items at the party.

❊ Nick had to put a spending limit for birthday gifts because I have no self-control when it comes to my baby.

❊ I am in denial that my baby is one.

I had a really long post planned for this day, but I cannot form the words as eloquently as I would like. And frankly, maybe its best that way. I think most of my words are best to be said to B when he is older.

At 5:44 am, B turned one. I can’t believe it. It seems like just yesterday we had the hospital stay(s) from hell.

He has turned into such a little man with an amazingly funny personality.

He loves to laugh, he loves to hear mom and dad laugh too.

He is learning to walk, I don’t think it will be too long before he is walking on his own.

He still doesn’t have any teeth, definitely still thinking that he will just get adult teeth

4 Years!

Today we have been married for 4 years! It is hard to believe it has been 4 years already. It was crazy this past weekend, my sister-in-law got married at the same location as we did and had a few of the same vendors, it was like déjà vu!

Side Note: I know this isn’t that current, but I couldn’t find something current that I love that fits the theme. I rarely can run to slowish songs, but I always make an exception for country, especially Jason Aldean.
Quotable: From her cowboy boots to her down home roots, she’s country. From the song she plays to the prayer she prays. That’s the way she was born and raised, she ain’t afraid to stay, country. Brother she’s country.

Side Note: I usually can’t listen to slower songs while running, but I love singing along to this song while running so it makes the time go by faster.

What songs make you think of the USA?

WILD HARVEST BREAKFAST SHOWDOWN

In August I am attending my first blogging conference, I mean it is practically in my backyard, so I have to go right?

I am attending the Healthy Living Summit in Cambridge, MA. When I registered for the conference I had the option to participate in the breakfast showdown. A cooking competition and a conference? Win, win. Last week a box of WILD HARVEST® goodies appeared on my door stop and I couldn’t wait to see what was inside.

The idea is to use three or more of the WILD HARVEST® items and to make a healthy breakfast!

I decided to use:
WILD HARVEST® Mango Peach Salsa
WILD HARVEST® Organic Black Beans
WILD HARVEST® Cage Free Brown Eggs
WILD HARVEST® Cayenne Pepper

So what did I make? A delicious Greek inspired egg scramble!

I always like to prepare all my ingredients before I even start cooking.

• Chop a medium yellow onion and 6 cloves of garlic

• 1/2 cup of non-fat milk

•1 cup of frozen spinach thawed & drained

•1/2 cup of feta

To start I drizzled some olive oil, straight from Greece, in a pan and sautéed the garlic and onion.

WHile the onion and garlic was cooking I combined 7 of the WILD HARVEST® eggs and the milk in a bowl.

Once that was mixed I added the feta, spinach, 1/2 tsp of salt, 1/4 tsp of pepper and WILD HARVEST® black beans

At the last minute I decided to add 1/4 tsp of the WILD HARVEST® Cayenne Pepper.

I poured the egg mixture into the skillet, set the temperature to medium and covered the dish. I let the scramble cook for 6 minutes.

I cut the scramble into 4 portions

Then I covered each portion with the WILD HARVEST® Mango Peach Salsa.

I wasn’t sure what to expect from the dish but it was filling, spicy and delicious. This is a great breakfast because it can fill you up without feeling heavy.

The top 5 finalists will be announced on or before August 18 and the winner will be announced at the Summit, the winner receives a $500 gift card redeemable at SUPERVALU stores! Good luck to all the other competitors!
