11 Random Things About Me:

1. The nastiest habit I’ve ever had was smoking. I smoked in high school and part of college. I didn’t want to tell anyone when I transferred colleges and quit cold turkey.

2. I love boy bands and I have no shame. I know all the ones from Europe and have seen most in concert. I also applied to be on MTV’s fanatic for the Backstreet Boys. NO SHAME!

3. I have never taken a gym class without a friend. I am terrified. I need to get over this.

4. I have worked almost every job you could imagine. Nanny, housekeeper, waitress, hostess, secretary, retail (in about 7 different stores), file clerk, worked in an insurance company, teacher, substitute, at a deli (my first day I made sausage), secondary education, etc…

5. I love high heels, and own many pairs. I rarely have an occasion to wear them :(.

6. I’ve met John Mayer, Howie Day, Matt Nathanson and Steven Tyler.

7. My husband is the most inspirational person I have ever met.

8. Most people think I am bitchy when they first meet me, but I am just really shy.

9. My favorite sports team is the Boston Red Sox.

10. I have one tattoo, and if my husband didn’t hate them, I’d definitely have more.

11. I want to open my own bake/coffee shop.

1. What is your favorite TV show?: I can’t pick an all time favorite. My favorites at the moment are: Alcatraz, How I Met Your Mother and One Tree Hill

2. Skiiing: downhill, cross country or water (or all/none!): I haven’t skied in years, despite growing up in Vermont & living in Massachusetts. I have skied both downhill & cross country, and I never could water ski.

3. Favorite season: winter, spring, summer or fall?: SUMMER. I love to be outside & summer fruits are the best.

4. Peanut butter or almond butter?: I’ve actually never had almond butter. I do love peanut butter.

5. Did you play sports in high school?: I played soccer

6. Who’s your favorite singer/band?: Again, I can’t pick one. My tops are always: John Mayer, Matt Nathanson, Something Corporate/Jack’s Mannequinn/ Andrew McMahon and Gavin DeGraw

7. Country music: yay or nay?: YAY. I love country.

8. What’s your favorite drink at Starbucks?: Grande Iced Coffee with non-fat milk. Even in the winter

9. What is your current fitness goal?: To get below my pre-baby weight. Not a specific number, but to be fit, health & happy. Also, I want to run a half marathon.

10. What’s your favorite type of exercise?: Strength Training. I love feeling strong.

11. What’s your dream job?: If I didn’t want a family I would’ve continued on my path to law school and work as a family lawyer. My other dream job is to be a event planner, alas I would never be able to give up my weekends.

Seven Months Old

My baby is seven months old. How did that even happen?

He is eating all types of food, fruits, veggies, yogurt and chicken. He loves everything except green beans.

So far we have no teeth and we haven’t started crawling, but B is rolling around all the time.

Dessert Redemption

I made a batch of Samoa bars once, but it was a complete and utter fail.

I went on pinterest of course, and found this recipe from love veggies and yoga. Check it out, it has vegan and gluten substitutions!

Pre-heat the oven to 350.

I started by melting 1 cup of butter.

I added 2 cups of brown sugar and 1/2 cup of white sugar.

Wait until the mixture is cool, so you don’t scramble your eggs.

2 eggs

2 tsp vanilla

2 cups shredded coconut

1 1/2 cups of flour

1 cup butterscotch chips

1 1/2 cups chocolate chips

Put into foil lined or greased pan. I used a cake pan.

I baked for 25 minutes. This is on the higher end, the recipe recommends 22-25.

They came out nice and golden.

They tasted just like samoa’s, dessert redemption achieved. They were so good I made our Superbowl guests take the leftovers otherwise I would eat them all day until they are gone.

The only change I would make is to use tinfoil instead of greasing the pan. The bars seemed a tad to greasy. I would also add peanut butter chips.

What’s Your Love Story?

1. How long have you and your significant other been together?

Nick and I have been together since June of 2005. We met during the middle of our junior years in college.

From before we started dating, we are babies.

2. How did you meet? {What’s your “love” story?}

We met through a mutual friend. She had known Nick since freshman year, and we were roommates while working in DC during our term abroad. We were friends for about 6 months. I visited his college apartment during a weekend at the beginning of the summer. Then we started talking on the phone every day and things progressed from there.

3. If married, how long have you been married?

We have been married since July 2008. I can’t believe it will be 4 years this summer

4. If you are married, where did you get married at? Big or small wedding?

We got married in Nick’s church in Connecticut, and had our reception at a hall nearby. It was a big wedding, my husband is Greek so lots and lots of family, friends and dancing.

5. Do you have any nick-names that you call one another? Do share!

Not really, we never rally got into the nickname thing

6. Name 3 things you love most about your honey.

He is patient, understanding, and loving. He is also a wonderful father!

7. Tell us how he proposed? Or your ideal proposal?

I will be the first to admit I hate surprises and will badger you to tell me my present, I just don’t like the unknown. Nick and I had looked at rings MONTHS before he actually proposed, and I badgered him constantly, I was mostly afraid of this big public proposal and not being prepared. We went for a long weekend to a bed and breakfast in rural PA. He proposed after dinner one night and it was very romantic. Fireplace, wine, just the two of us.

8. Is he a flowers and teddy bear kind of guy for v-day, or strawberries, champagne, and rose petals?

Not really, and neither am I. I think if those things were important to me, he would make them happen. I prefer a nice dinner just the two of us.

9. Are you a sunset dinner on the beach kind of girl, or pop a movie in and relax on the couch?

Both, I love the beach and some of our best trips have to the beach. However we have had many a date night with leftovers, the dvr and sweatpants.

10. Tell us one thing you’d like to do with your significant one day. If you could do anything? Go anywhere?

Hawaii and traveling Europe.

11. Tell us what you plan on doing on this Valentine’s Day.

My mom is babysitting B so we can go to dinner just the two of us!

12. Are you asking for anything this Valentine’s day?

No, although the stinker already got me something

13. Give us one piece of advice of keeping a relationship strong and full of love.

You can’t make a relationship last if you can’t communicate/ Communicate your love and things that are bothering you

Homemade Samoa’s

This post has been a overdue for awhile. Back when I had our girls December cookie swap, I was being over ambitious and wanted to make two cookies to swap. My first was a Greek cookie called Koulouria and I wanted my second to be a homemade samoa.

It was very late when I got started, I decided to use the recipe from We Are Not Martha. I started getting out all my ingredients when I realized I was out of eggs. I used my good friend google to see what I could substitute. The most common substitutes were applesauce or mashed banana. I didn’t have those either. So I looked up vegan cookie recipes, I found one for shortbread and I decided to make that. I put it in the oven and started preparing the coconut. As the cookie was baking I put the coconut in the over to toast. I took both items out at the same time.

I noticed the cookie was a little greasy looking, I took a small piece from the corner to taste. It seemed to taste buttery, but I thought that maybe all the ingredients together, it would taste better. I then looked at the coconut, it was toasted a little too long. I decided I had done half the steps, I might as well do the other half.

I made the caramel and it came out great, I decided I would do the chocolate now and just pour the chocolate on top of the caramel and freeze the bars for an hour then put them in the fridge overnight.

I put the chocolate in the microwave and I forgot about it, and it burned. It was a rock, in the middle. I had to do it over. I put the chocolate on top of the bars, froze them until we went to bed then put them in the fridge.

The next morning I took them out and tasted them. They were awful. They tasted like a greasy burnt mess.

I love samoa’s and since I don’t know any girl scouts, am going to have to try my hand at these again. I know it was my fault they turned out poorly, but next time I think I am going to try the recipe from Love Veggies and Yoga. Who wants to try this batch?
